We use a latest generation oil mill that allows us to keep under control one of the most important phases that characterize our oil to enhance all the aromas that the cultivars express in their particularities.
We have chosen a MORI TEM system with vertical malaxers, a technological jewel designed to minimize the oxidative impact of the pasta and to maximize the quality of the oil.
